Crab Cucumber Bites
These impressive little appetizers come together quickly, making them perfect for entertaining. Use the freshest crabmeat you can find, and be sure to pick it over and remove any stray pieces of shell.
Ingredients
- 3 medium cucumbers – English cucumbers are best
- 2/3 cup cream cheese
- 2 tbsp lemon juice
- 1 tbsp hot pepper sauce
- 1 package (8 ounces) imitation crabmeat, chopped
- 1/3 cup finely chopped sweet red pepper
- 2 pieces green onions, sliced
Instructions
- Cut cucumber into 1/2-in. thick slices. Pat dry and setaside. Optional: peel stripes on thecumbers before slicing.
- In a small bowl, beat the cream cheese, lemon juice andpepper sauce until smooth. Fold in the crab, red pepper and onions. Place 1heaping teaspoonful onto each cucumber slice. Serve immediately or chill for up to 2 hours, covered,before serving.
